The Head Bartender is responsible for managing bar operations, leading the bar team, and delivering a consistent and high-quality customer service experience. This role involves team supervision, training, inventory management, and close coordination with management to ensure service and operational standards are met.
The role requires a hands-on leader who can manage daily service operations, engage customers, and ensure compliance with hygiene and safety standards.
Responsibilities
1. Bar Operations & Service Excellence
- Lead daily bar service with strong control over pace, quality, and guest experience- Ensure consistent execution of cocktails, non-alcoholic beverages, and bar presentation
- Oversee bar readiness, mise en place, opening/closing routines, and hygiene standards
- Handle service recovery professionally and escalate complex issues to the GM when required
2. Team Leadership & Training
- Lead, coach, and motivate bartenders and junior bartenders
- Conduct shift briefings, post-service reviews, and on-the-job coaching
- Manage onboarding and ongoing training to ensure consistent standards
- Foster a disciplined, respectful, and high-performance team culture
3. Guest Experience & Hosting
- Act as a visible host at the bar, building rapport with regulars and VIP guests
- Deliver personalised service by remembering guest preferences and details
- Coordinate closely with hosts and floor teams to manage bar seating and flow
4. Beverage Programme & Standards
- Maintain drink recipes, prep sheets, and service specifications
- Ensure consistency in taste, balance, presentation, and temperature
- Support menu updates and controlled trials for new beverages
5. Inventory & Cost Control
- Manage bar inventory, ordering, receiving, and stock rotation
- Conduct stocktakes, track variances, and reduce wastage
- Ensure POS accuracy for all bar items
6. Reporting & Communication
- Provide regular updates to the GM on stock, training progress, and operational issues
- Flag staffing gaps, equipment needs, or service risks early with proposed solutions
7. Any other duties as assigned by the Reporting Manager
Requirements
- Minimum 5 years of bartending experience, including 2 years in a leadership role
- Strong operational discipline and attention to detail
- Proven ability to train, coach, and lead a bar team
- Confident hosting skills and excellent guest engagement
- Comfortable working in a fast-paced, high-standard environment
